Apple Cheesecake Bars 
Recommended varieties: Zestar, E2, Cortland, Haralson, Ace   
 2 cups  Flour
 1/2 cup  Packed brown sugar
 3/4 cup  Cold butter, cubed
 2  8 oz. blocks cream cheese, softened
 1/2 cup  Sugar
 1 tsp  Vanilla
 2  Eggs, lightly beaten
 3  Medium apples, peeled & finely chopped
 2 Tbsps  Sugar
 1/2 tsp  Cinnamon
 1/4 tsp  Ground nutmeg

Streusel Topping Ingredients: 
 3/4 cup  Flour
 3/4 cup  Packed brown sugar
 1/2 cup  Oatmeal
 1/3 cup  Cold butter, cubed

1. Preheat oven to 350 and grease a 9x13 pan. Combine flour and brown sugar in a bowl and cut in butter until crumbly. Press mixture into the pan and bake for 15-18 minutes until lightly browned. 
2. While crust is baking, beat cream cheese, 1/2 cup sugar and vanilla until smooth. Add eggs and beat on low until combined. Spread mixture over baked crust.
3. Mix apples with 2 Tbsp sugar, cinnamon and nutmeg. Spoon over cream cheese mixture.
4. Mix the first three ingredients of the streusel topping in a bowl. Cut in butter until crumbly and sprinkle over apples.
5. Bake 30 minutes or until filling is set and the apples have softened. Cool on a wire rack for 1 hour and then refridgerate for at least 2 hours.
