Baked Apple Oatmal with Raisins and Walnuts 
Recommended varieties: E2, Honeycrisp, Haralson, Ace  
 2 cups  Old-fashioned rolled oats
 3/4 cup  Brown sugar
 1 cup  Chopped walnuts or pecans, divided
 1/2 cup  Raisins
 1 tsp  Baking powder
 2 tsps  Cinnamon
 1/2 tsp  Salt
 2  Large eggs
 2 cups  Milk
 1 tsp  Vanilla
 4 Tbsps  Unsalted butter, melted
 2  Large apples, peeled and cut into 1/2 inch chunks

1. Preheat oven to 325. Grease an 8 or 9 inch baking dish with butter. Layer the chopped apples evenly in the pan. 
2. Combine the oatmeal, brown sugar, 1/2 cup of nuts, raisins, baking pwder, cinnamon and salt in a bowl. Mix well.
3. In a separate bowl, whisk the eggs; add milk and vanilla and whisk until well combined.
4. Pour the milk mixture into the oatmeal mixture. Add the melted butter and mix well.
5. Pour the oatmeal mixture over the apples. Sprinkle remaining nuts on top. Bake for 40-45 minutes or until the oats are set and the top is golden.
