| Baked Apple Oatmal with Raisins and Walnuts |

| Ingredients: |
| 2 cups | Old-fashioned rolled oats |
| 3/4 cup | Brown sugar |
| 1 cup | Chopped walnuts or pecans, divided |
| 1/2 cup | Raisins |
| 1 tsp | Baking powder |
| 2 tsps | Cinnamon |
| 1/2 tsp | Salt |
| 2 | Large eggs |
| 2 cups | Milk |
| 1 tsp | Vanilla |
| 4 Tbsps | Unsalted butter, melted |
| 2 | Large apples, peeled and cut into 1/2 inch chunks |

| 1. Preheat oven to 325. Grease an 8 or 9 inch baking dish with butter. Layer the chopped apples evenly in the pan. |
| 2. Combine the oatmeal, brown sugar, 1/2 cup of nuts, raisins, baking pwder, cinnamon and salt in a bowl. Mix well. |
| 3. In a separate bowl, whisk the eggs; add milk and vanilla and whisk until well combined. |
| 4. Pour the milk mixture into the oatmeal mixture. Add the melted butter and mix well. |
| 5. Pour the oatmeal mixture over the apples. Sprinkle remaining nuts on top. Bake for 40-45 minutes or until the oats are set and the top is golden. |
