Medium apples, peeled & finely chopped |

Streusel Topping Ingredients: |
3/4 cup |
Flour |
3/4 cup |
Packed brown sugar |
1/2 cup |
Oatmeal |
1/3 cup |
Cold butter, cubed |
Directions: |
1. Preheat oven to 350 and grease a 9x13 pan. Combine flour and brown sugar in a bowl and cut in butter until crumbly. Press mixture into the pan and bake for 15-18 minutes until lightly browned. |
2. While crust is baking, beat cream cheese, 1/2 cup sugar and vanilla until smooth. Add eggs and beat on low until combined. Spread mixture over baked crust. |
3. Mix apples with 2 Tbsp sugar, cinnamon and nutmeg. Spoon over cream cheese mixture. |
4. Mix the first three ingredients of the streusel topping in a bowl. Cut in butter until crumbly and sprinkle over apples. |
5. Bake 30 minutes or until filling is set and the apples have softened. Cool on a wire rack for 1 hour and then refridgerate for at least 2 hours. |
