Baked Apple Oatmal with Raisins and Walnuts |

Old-fashioned rolled oats |

Chopped walnuts or pecans, divided |

Unsalted butter, melted |

Large apples, peeled and cut into 1/2 inch chunks |
Directions: |
1. Preheat oven to 325. Grease an 8 or 9 inch baking dish with butter. Layer the chopped apples evenly in the pan. |
2. Combine the oatmeal, brown sugar, 1/2 cup of nuts, raisins, baking pwder, cinnamon and salt in a bowl. Mix well. |
3. In a separate bowl, whisk the eggs; add milk and vanilla and whisk until well combined. |
4. Pour the milk mixture into the oatmeal mixture. Add the melted butter and mix well. |
5. Pour the oatmeal mixture over the apples. Sprinkle remaining nuts on top. Bake for 40-45 minutes or until the oats are set and the top is golden. |
