Raw Apple Spice Cake

4 Cups apples (peeled and sliced)
3 eggs
1 cup salad oil
2 cups Sugar
1 tsp. vanilla
2 cups flour
2 tsp. cinnamon
1 tsp soda
1/2 tsp salt
1 cup chopped nuts

Cream Cheese Icing:
1 (8oz.) pkg. cream cheese
1 T. melted margarine
2 tsp. vanilla
1 T. lemon juice
2 C. powdered sugar


Spread sliced apples on bottom of a 9x13-pan.  Does not have to be greased.  Beat eggs and salad oil until thick.  Add sugar, vanilla, flour, cinnamon, soda, salt and chopped nuts.  Spread or drop batter over the apples.  Bake at 350o for 45 minutes to 1 hour.  After cake is cool, frost with Cream Cheese Icing.  For Icing:  Combine all ingredients and cream well.  Put frosting on a cooled cake.  Similar recipe's add 1/2 tsp nutmeg.
