Apple Bundt Cake

1 1/2 cups cooking oil

2 cups white sugar

1/4 cup light brown sugar

3 eggs, lightly beaten

2 1/2 cups flour

2 tsp. baking powder

1 tsp. baking soda

1 tsp. salt

1/4 tsp. orange peel spice

1/4 tsp. ginger

1 1/2 tsp. nutmeg

1 1/2 tsp. cinnamon

3 cups diced apples (do not peel)

1 cup chopped walnuts

2 tsp. vanilla

Powdered sugar to dust cake


Cream oil, and sugars in a bowl until well mixed.  Add eggs and mix well.  In another bowl mix flour, baking powder, baking soda, salt, orange peel, ginger, nutmeg, cinnamon and blend well.  In another bowl combine apples and walnuts.  Blend apple mixture with flour mixture and slowly add to sugar mixture, mixing well.  Blend in vanilla.  Pour into lightly greased and floured bundt pan.  Bake at 350 for 60 - 75 minutes.  Remove from oven, let cool.  Invert on serving plate, sprinkle with powdered sugar.

 Optional: Bake as muffins, 20 minutes at 350.
